Create two seasonal yeasted breads from Italy

Come and join Danielle’s class on a Winter day and learn how to make two beautiful Italian yeasted delights you might not have come across before: Buccellato from Lucca a richly fruited bread with a smooth walnut filling and Baba Napolitano steeped in orange and rum. Both recipes make a fabulous addition to the seasonal table.

In this class, you’ll learn tips and techniques that apply to these breads and other yeasted recipes you make. All the steps required will be shown, but not in real time! The recipe will show you what you can prepare in advance (taking advantage of an overnight prove) so you can join in some of the steps or simply sit back with a glass of wine and bake later.

What you’ll learn:

  • Two different yeasted bread from Italy
  • How to choose the right ingredients and flour for your bakes
  • How temperature is important for successful bread
  • How to use the fridge to your advantage

This baking class is suitable for novices and enthusiasts to baking thanks to Louise’s teaching style and classic recipes.

What you’ll need:

If you are planning to cook along with Danielle then the following equipment would be useful:

  • A stand mixer with a dough hook
  • A digital thermometer
  • Rolling pin
  • Spatula
  • Pastry brush
  • Baking tray
  • A baking mould with a hole in the centre eg a Kugelhopf, Savarin or Fluted cake ring. This is
    optional, you can shape and bake on the baking tray.
  • Dariole or baba moulds. You can use a deep muffin tin for a similar result.

In case you don’t have some of the items listed above, don’t worry, we can find an alternative.

Danielle Ellis trained professionally over 4 months in France in 2014 after a career in Marketing. She has a passion for all types of bread and uses the techniques learned in France to make bread baking more simple and consistent. Now based in Gloucestershire, she specialises training both online and in person. She’s also a food judge for the NFWI; World Bread Awards and Taste of the West.
